FOR THOSE who are not particularly fond of pork, but would like to prepare a magnificent meal centered on beef.

Ingredients:

4 lbs beef round eye round roast (serves 6 – 8)
golden cooking wine
a package of Oscar Mayer naturally hardwood smoked bacon
bay leaves
garlic powder

Preparation:

Place beef in container, and wash beef thoroughly with water.

Use a sharp knife to poke holes throughout the beef, so that it can absorb the seasoning.

Make a large deep hole the length of the eye round roast, and add salt to taste through it. Push the salt through so that it reaches the length of the beef.

Pour a cup of golden cooking wine over the beef.

Place ½ a cup of cooking oil in a large pot and heat the oil.
Perform a final salt taste before browning the meat.

Place stuffed eye round roast in the hot oil, but save the cooking wine with condiments in a separate container. Turn beef periodically, so that it browns evenly.

While beef browns, peel 5 – 6 small red potatoes, rinse them with water, and place them immediately in a container with water, until they are needed.
Finely chop a medium onion.
Place the chopped onion in the pot with the stuffed eye round roast, lower heat to medium, and cook onion for about 10 minutes.
After 5 minutes, pour the cooking wine you saved in an earlier step over the beef, and continue cooking for the remaining 5 minutes.

As beef cooks, use a cooking spoon to pour the juice in the bottom of the pot over the eye round roast. You may sprinkle pepper over beef at this time.

After 10 minutes, transfer the contents of the pot to your pressure cooker (PC).
Pour 4 cups of water into the PC.
Place cover on pressure cooker and place on stove at maximum heat for 5 – 6 minutes. Allow to come to a boil. Pressure cooker regulator will alert.
Lower heat to medium and let cook for 45 minutes.
After 45 minutes, turn heat off and allow pressure cooker to cool down. Caution: Do not, under any circumstances, attempt to remove the cover while the pressure cooker is still hot. Follow the manufacturer’s instructions to the letter.
Before removing the cover, place the PC under cold running water to hasten the cooling down process. Tap the PC regulator slightly to make sure all the pressure has been released.
Remove the PC cover, and place the stuffed eye round roast on a cutting board to slice more easily.

Transfer the juice or gravy in the PC to a large pot, and place the potatoes that you prepared in an earlier step into the pot.

Placed stuffed eye round roast slices in the pot with the potatoes. Bring to a boil at medium high, and cook for 20 minutes, or until potatoes are done. Hint: Take out some of the liquid and set it aside in case the beef dries too much.

When potatoes are done, continue cooking for another 15 minutes or so to allow beef to dry. Adjust the heat as needed, so that the beef does not dry completely.

COCINA CUBANA: COMO HACER UN BUEN BOLICHE ESTILO CUBANO.

Para aquellos que no les gustan mucho la carne de cerdo, pero les gustaría preparar una magnífica comida centrada en carne.

Ingredientes:

4 libras de carne ronda ojo redondo asado (para 6-8)
vino de cocina de oro
un paquete de Oscar Mayer, naturalmente madera tocino ahumado
hojas de laurel
polvo de ajo
I cebolla mediana
pimienta
sal kosher gruesa
Preparación:

Coloque la carne en un recipiente, y lavar carne con abundante agua.

Carne asada redondo redondo ojo.
Utilice un cuchillo afilado para hacer agujeros en toda la carne, para que pueda absorber los condimentos.

Hacer un gran agujero profundo de la longitud de la ronda asada ojo, y se rectifica de sal a través de él. Empuje la sal a través de modo que alcance la longitud de la carne de vacuno.

Ponga el boliche en el aceite caliente, pero guardar el vino para cocinar con los condimentos en un recipiente aparte. Gire carne periódicamente, para que se dore uniformemente.

Mientras marrones carne, pelar 5-6 papas rojas pequeñas, enjuague con agua y colocarlos inmediatamente en un recipiente con agua, hasta que se necesiten.
Picar una cebolla mediana.
Coloque la cebolla en la olla con el relleno asado ronda los ojos, bajar el fuego a medio y cocine la cebolla durante unos 10 minutos.

El agente cubano Gerardo Hernández, condenado a dos cadenas perpetuas por sus labores de espionaje en Estados Unidos, deslizó críticas a los miembros de la Red Avispa que cooperaron con las autoridades federales para reducir sus condenas.

En un mensaje de exaltación al agente René González, quien renunció a su ciudadanía estadounidense para permanecer en Cuba, el jefe de la red hizo mención a sus compañeros de misión que se apresuraron a cooperar con el gobierno a cambio de recibir un perdón y “una nueva vida”.

“Pudo valerse [René] de los mismos pretextos de quienes muy pronto decidieron declararse culpables y cooperar con las autoridades”, afirmó Hernández en un mensaje enviado desde la prisión federal de Victorville, California, y publicado este viernes en el diario Granma.

Se calcula que la Red Avispa -en operaciones en el sur de la Florida- contaba al menos con 25 miembros. De ellos, fueron capturados 14 y siete decidieron cooperar con las autoridades. Salanueva y Juan Emilio Aboy, ambos miembros de la red, fueron deportados a Cuba, y al menos otros seis lograron escapar de la redada del FBI.

En las campañas propagandísticas por la liberación de sus agentes, Cuba se refiere insistentemente a los Cinco Héroes Prisioneros del Imperio. Sin embargo, hay un manto de silencio sobre las identidades de los “siete no héroes”, cuyas condenas fueron reducidas y se encuentran bajo el programa de protección de testigos de Estados Unidos.

La referencia de Hernández al “grupo de colaboradores” es una de las escasas alusiones al tema en los medios oficiales cubanos. Hasta que cierto día, se presentó el dueño del Tropicana de La Habana Víctor Correa con su esposa Estrellita Romero se presentaron en Pasapoga y
a Estrellita le entusiasmo la idea de contratar a Los Chavales de España para llevarlos a La Habana.

Eran 11 músicos. Manolo Palos, Pepe Lara, Luis Tamayo. No usaban partituras y tocaban todas las canciones de memoria. Eran verdaderos músicos ya que tocaban más de dos instrumentos cada uno y que combinaban en cada presentación logrando realizar un verdadero show.

En 1952 agotan una temporada de verano en el hotel Waldorf Astoria de la ciudad de Nueva York y se presentan en programas estelares como el Ed Sullivan Show, The Bell Telephone Hour y The Red Skelton Show.

En 1948 pasó a Cuba y luego, debido la revolución cubana (1959), a Miami. En 1955 la RCA Victor editó un LP titulado “Fiesta at the Waldorf Astoria by Los Chavales de España” (LP-1095)Siendo una orquestina de salón integrada por excelentes músicos, Los Chavales de España se adaptaban fácilmente a los nuevos aires de las modas musicales pero sin abandonar los rasgos de ese “cliché español” que les hizo populares en los países caribeños donde tenían sentadas sus reales LOS CHAVALES DE ESPAÑA.

En 1952 Correa vende Tropicana, pero siguió siendo Manager de Los Chavales de España,. Comenzaría allí una gira por Estados Unidos siendo el Chateau Madrid de New York, lugar que se radicaron muchos años.
