Que cubano no ha probado aunque sea una vez en su vida una de las recetas mas criollas y sabrosas de la cocina de nuestra isla.
Aunque para algunos solo sea un potaje o guiso de viandas y carnes, puede decirse que es el alma de Cuba convertida en manjar. En él se sintetizan más de 500 años de historia, la irreversible mezcla de razas, culturas, e idiosincrasias de nuestra region.

INGREDIENTES (para 12 personas):
CARNES:
½ gallina
1 libra de falda de ternera
2 libras de masa de puerco
VIANDAS
2 mazorcas de maíz
1 libra de malanga
2 plátanos verdes
1 libra de yuca
1 libra de boniato
2 plátanos maduros
2 limones
SOFRITO
2 cucharadas de aceite
1 cebolla
2 dientes de ajo
1 ají grande
1 taza de puré de tomate
2 cucharadas de sal
7 litros de agua

ELABORACIÓN:
Si puede incluir tasajo en la receta, que sea ½ libra. Y entonces, antes que nada, corte el tasajo en 3 o 4 pedazos y póngalos a remojar desde la noche anterior. A la mañana siguiente bótele el agua. En una cazuela grande ponga en tasajo remojado, la gallina y el agua. Déjelo hervir hasta que empiece a ablandarse. Si no tiene tasajo, entonces ponga solo la gallina. Añada la falda y el puerco. Déjelo hervir aproximadamente una hora más.
Mientras se cocinan las carnes, haga el sofrito y pele las viandas en el mismo orden en que las añadirá al caldo, como aparecen en la receta. Añada el sofrito y las viandas, agregando jugo de limón cada vez que añada plátano. Tápelo y déjelo cocinar a fuego lento aproximadamente una hora más. Para espesar el caldo, aplaste 2 o 3 pedazos de viandas.
Sirva caliente el ajiaco cubano. No olvide añadir jugo de limón a su gusto.

ELABORATION:

La popular enciclopedia electrónica Encarta, para ejemplificar las costumbres de los cubanos –de dentro y de fuera de la Isla– sitúa las imágenes de dos mesas de dominó con sus respectivos jugadores y mirones –sapos en el argot–, una en Cuba y la otra en la Pequeña Habana de Miami. Acaso de tantas costumbres que se han ido perdiendo, la de jugar dominó es una de las poquísimas que sobrevive en el siglo XXI. Una fiesta familiar, o una reunión de amigos y amigas siempre puede conducir a una mesa de dominó.
Como todo el mundo sabe el dominó en Cuba es sagrado y se juega en cada rincón, desde la punta de Maisí hasta el cabo de San Antonio. En la isla el dicho sería: “no hay sábado sin sol, ni fiesta cubana sin dominó”.
El dominó es un juego de mesa en el que se emplean unas fichas rectangulares divididas en dos cuadrados, cada uno de los cuales lleva marcados de cero a nueve puntos.
El origen del juego tiene varias versiones.
La primera se basa en la supuesta más antigua alusión escrita sobre el dominó, la cual se localiza en China, en el escrito “Antiguos hechos de Wulin”. En dicho documento se hace referencia a los “pupai” (juegos de placas o dominós) y a los dados como objetos vendidos por los mercaderes durante la dinastía Yuan.
Otras versiones explican que el nombre del juego es de origen francés y fue tomado de una capucha negra por fuera y blanca por dentro, los mismos colores que presenta el dominó generalmente. Supuestamente los italianos fueron los que lo regaron por toda Europa.
El caso es que llegó a Cuba y no se sabe con exactitud si vino desde Italia, España o Estados Unidos.
En la isla existen dos tipos de dominós: el oriental que emplea 28 fichas, con combinaciones del 1 al 6. Y el que se juega en occidente que tiene 55 fichas, que llega hasta el 9. Generalmente se juega en pareja aunque también existen otras modalidades como el “solo para solo”, la longaniza, etc.
El dominó en nuestro país no es solo poner una ficha tras otra, con el objetivo de pegarse. La experiencia del juego va más allá. Se trata de todo un vocabulario exclusivo para el mismo, de actitudes y estrategias como farolear, agacharse, botar la gorda, tirar las fichas, tocar la mesa para pasarse, etc.
Por ser el juego de mesa más popular, el dominó comparte con el béisbol el privilegio de hacer la mayor cantidad de aportaciones a la fraseología. Continuamente, en diversas situaciones, se utilizan frases que son metáforas de este juego, tales como “dale agua al dominó” (para que algo se mueva, que fluya); “se trancó el juego” (cuando una situación no tiene salida); “refresca la data” (alivia la tensión); “la misma y la parecida” (la situación no cambia).
Un lector no cubano probablemente no entiende de qué se trata, tiene que verlo y vivirlo. De seguro va a disfrutar la pasión que ponemos en cada ficha.
The popular Encarta electronic encyclopedia, to exemplify the customs of Cubans – inside and outside the island – places the images of two tables of dominoes with their respective players and bystanders -sapos in the slang-, one in Cuba and the other in the Little Havana of Miami. Perhaps of so many customs that have been lost, the one to play dominated is one of the very few that survives in the 21st century. A family party or a gathering of friends can always lead to a domino table.
As everyone knows, dominoes in Cuba are sacred and are played in every corner, from the tip of Maisí to Cabo de San Antonio. On the island the saying would be: “there is no Saturday without sun, no Cuban party without dominoes”.

Esteban Ernesto Echevarria, más conocido solo como Steven Bauer (“Bauer” es el apellido de soltera de su madre) nació en La Habana, Cuba, el 2 de diciembre de 1956. Su apodo es Rocky. Es un actor y productor conocido por las películas Scarface (1983), Traffic (2000) y Primal Fear (1996).
Es el hijo de Lillian, una maestra de escuela, y Esteban Echevarria, un piloto que trabajó para Cubana Airlines hasta la Revolución Cubana. El abuelo materno de Steven era un refugiado judío de Alemania y su apellido de escena proviene de ese lado de su familia.
Steven asistió a la Universidad de Miami, donde era una especie de galán en el campus. En el teatro Ring de la Escuela de Arte Dramático, interpretó roles como Lennie en “Of Mice and Men”. Sus padres emigraron al sur de Florida, en 1960, cuando Steven tenía tres años.
Se graduó de Coral Park High School en Miami, Florida.
Fue la elección original para el papel principal de Kingpin (2003). Fue reemplazado por Bobby Cannavale en el último minuto. Si hubiera obtenido el papel, habría sido su tercera vez como traficante de drogas.
Su gran oportunidad para el cine llegó con el importante papel de Manolo Ribera en Scarface (1983), aunque en ese momento era un actor relativamente desconocido. Los productores estaban convencidos de que era el adecuado para el papel basado en su fuerte audición, así como su auténtico origen cubano. Su actuación dibujó una nominación al Globo de Oro a Mejor Actor de Reparto.
A principios de la década de 1980, se mudó a la ciudad de Nueva York y estudió con el famoso gurú de la actuación Stella Adler, apareciendo en el escenario en producciones ocasionales.

Aparece en el video musical “Would I Lie to You” (1985) como el novio motociclista de Annie Lennox que deja al cantante en un concierto de Eurythmics. Bauer acababa de hacer un debut como actor auspicioso en Scarface (1983) como el amigo Manny de Al Pacino.

Esteban Ernesto Echevarria better known only as Steven Bauer (“Bauer” is his mother’s maiden name) was born in Habana, Cuba on December 2, 1956. His Nickname is Rocky. He is an actor and producer known for pictures Scarface (1983), Trafic (2000) and Primal Fear (1996).
Is the son of Lillian, a schoolteacher, and Esteban Echevarria, a pilot who worked for Cubana Airlines until the Cuban Revolution. Steven’s maternal grandfather was a Jewish refugee from Germany and his stage surname comes from that side of his family.
Steven attended the University of Miami, where he was something of a heartthrob on campus. In the School of Drama’s Ring Theater, he played such roles as Lennie in “Of Mice and Men.” His parents immigrated to southern Florida, in 1960, when Steven was three years old.
He is a graduate of Coral Park High School in Miami, Florida.
He was the original choice for the lead role of Kingpin (2003). He was replaced by Bobby Cannavale at the last minute. Had he got the role, it would have been his third time as a drug dealer.
His big film break came with the substantial role of Manolo Ribera in Scarface (1983) even though he was a relatively unknown actor at the time. The producers were convinced that he was right for the role based on his strong audition, as well as his authentic Cuban background. His performance drew a Golden Globe nomination for Best Supporting Actor.
In the early 1980s, he moved to New York City and studied under famed acting guru Stella Adler, appearing on stage in occasional productions.
Originally intended to become a musician but turned to acting while attending Miami-Dade Community College. He then transferred to Theater Arts Department of the University of Miami.
