CUBAN-CHINESE CUISINE: “FRIED RICE” RECIPE.

INGREDIENTS:
2 pounds large shrimp, peeled, deveined, and butterflied (save shells)

6 eggs
1 tablespoon soy sauce
2 tablespoons chicken stock or broth
3 tablespoons Peanut or vegetable oil for frying
1 cup chopped onion
1 cup chopped green bell pepper
1/2 cup carrot, diced
3 cloves garlic, minced
4 cups cooked rice
1/2 cup chicken stock or broth (more or less) mixed with 2 tablespoons soy sauce
2 cups leftover lechón asado, diced (or substitute ham)
1/2 cup chopped green onions
1/2 cup frozen green peas

Options

Shrimp, Lobster, Crabmeat.

Scramble the eggs with a whisk, adding soy sauce and chicken broth.

Heat a tablespoon or two of oil in a large 5-quart or larger sauté pan or wok, rolling the oil around to coat the bottom and sides.

When the oil is very hot, pour half of the egg mixture in so that it coats the bottom. It should look like you’re making a giant pancake.

Lower heat to medium-low and cook thoroughly, flipping once. Remove from pan and cut the egg into long thin strips.

In the same pan, add a little more oil and sauté onion and green pepper over medium-low heat until the onion is soft and translucent.

Lower the heat to low and add the minced garlic and the carrots. Continue to cook for about 1 to 2 minutes more. Don’t let the garlic get brown.

Add the rice and a little more oil and fry for about 5 minutes, stirring frequently. Add some chicken broth or stock, enough to flavor the rice, but not enough to make it soupy.

Add the rest of the scrambled eggs and a dash or two of “salsa china” (soy sauce). Add the diced lechón and stir sparingly. Continue cooking for 5 minutes.

Gently fold in the green onions, green peas, and egg strips. Remove from heat, cover, and let stand for a minute or two. Serve hot.

Variations

Seafood
If you want a seafood twist, omit the lechón or ham and sauté some small shrimp, lobster tail meat, or crabmeat in a little bacon fat. Add to the rice just before.

2 cucharadas de caldo de pollo o caldo
3 cucharadas de maní o aceite vegetal para freír
1 taza de cebolla picada
1 taza de pimiento verde picado
1/2 taza de zanahoria, cortada en cubitos
3 dientes de ajo picados
4 tazas de arroz cocido
1/2 taza de caldo de pollo o caldo (más o menos) mezclada con 2 cucharadas de salsa de soja
2 tazas asado sobrante lechón, cortados en cubitos (o sustituto de jamón)
1/2 taza de cebolla verde picada
1/2 taza de guisantes congelados verdes

Opciones

Camarón, langosta, carne de cangrejo.

Mezcle los huevos con una batidora, añadir la salsa de soja y el caldo de pollo.

Calentar una cucharada o dos de aceite en una 5-cuartos o más grande sartén o wok, rodando el aceite alrededor para cubrir el fondo y los lados.

Cuando el aceite esté muy caliente, vierta la mitad de la mezcla de huevo en la que recubre la parte inferior. Debe tener un aspecto como si estuvieras haciendo una tortilla gigante.

Baje el fuego a medio-bajo y cocine a fondo, volteando una vez. Sacar de la sartén y cortar el huevo en tiras largas y delgadas.

En la misma sartén, añadir un poco más de aceite y sofría la cebolla y el pimiento verde a fuego medio-bajo hasta que la cebolla esté suave y translúcida.

Baje el fuego a bajo y agregue el ajo picado y las zanahorias. Continuar la cocción durante aproximadamente 1 a 2 minutos más. No deje que el ajo llegar marrón.

Añadir el arroz y un poco más de aceite y freír durante unos 5 minutos, revolviendo con frecuencia. Añadir un poco de caldo de pollo o de valores, lo suficiente para dar sabor al arroz, pero no lo suficiente para que sea algo jabonosa.

Añadir el resto de los huevos revueltos y una pizca o dos de “china salsa” (salsa de soja). Agregue el lechón en cubitos y revuelva con moderación. Continuar la cocción durante 5 minutos.

Incorpore suavemente en las cebollas verdes, guisantes verdes, y las tiras de huevo. Retirar del fuego, tapar y dejar reposar durante un minuto o dos. Servir caliente.

Mariscos

Así lo ha manifestado Zapatero en una entrevista en el programa Hora 25 desde La Habana, en el que ha opinado que “quizá un acercamiento más sincero y más directo abre más expectativas de diálogo para todos”.

A juicio de Zapatero, en este momento en Cuba “España debería estar más presente. Sin duda tenemos un responsabilidad histórica por los vínculos culturales de toda naturaleza”.

Recordó que cuando estuvo en febrero pasado en la isla percibió “que hay una simpatía, una relación, unas ganas de España en Cuba y de que España esté en este momento”.

En este sentido, animó, de manera decidida, “al Gobierno de España a que se haga más presente en Cuba”, por lo que celebró que el ministro de Economía, Luis de Guindos, vaya a la isla, aunque opinó que “deberíamos de trabajar para que hubiera una visita de más alto nivel, incluido el presidente del gobierno”.

Empatía entre Castro y Obama

En el campo económico, refirió el ex presidente, “me consta que el Gobierno está haciendo esfuerzos, pero Cuba quiere ver a España en la cabeza de los países que se acercan y España debe estar en esa cabeza, entre otras cosas porque es un sentimiento muy profundo de los españoles y de los españoles de Cuba”.

Recordó que gracias a la ley de Memoria Histórica “más de 100.000 cubanos han adquirido el pasaporte español. Este dato es fundamental porque es un caudal de vinculación y de responsabilidad extraordinaria para España”.

Asimismo, alabó la política de apertura del presidente de Estados Unidos, Barack Obama, en la superación del aislamiento de Cuba, y añadió que para ayudar a esa superación “tenemos que demostrar que somos esa España americana que la historia nos ha hecho”.

De la conversación que mantuvo en su visita a la isla con el presidente de Cuba, Raúl Castro, desveló que le vio “muy convencido de la bondad del proceso y sobre todo muy entusiasmado con el presidente Obama”.

Dijo que Raúl Castro le contó detalles de la conversación que éste mantuvo con Barack Obama por teléfono, una conversación “distendida” y que, en su encuentro con el presidente cubano notó una gran “empatía” de Castro hacia Obama.
